To the person asking, usually an intrigued, maybe-one-day vegetarian, this makes it seem hard. What if you didn&#8217;t cook a nice, <a href=\"https:\/\/www.nomeatathlete.com\/vegetarian-recipes-for-athletes\/\">healthy recipe<\/a> the night before, or are trying out the <a href=\"https:\/\/www.nomeatathlete.com\/make-it-stick\/\">plant-based diet<\/a> before 5:00 approach? Are you stuck with salad?<\/p>\n\n\n\n<p>Or worse, going hungry? <\/p>\n\n\n\n<p>To better answer the question and avoid turning off potential veggie converts, I put together a list of vegan lunch ideas fit for the office. The only assumptions: You have access to a microwave, a toaster, and a way to keep food cold.  <\/p>\n\n\n\n<p>And no leftovers allowed.<\/p>\n\n\n\n<p>Here&#8217;s what I came up with. Most of them are meals in their own right; others are more like snacks that could be combined or supplemented with some fruit, nuts, or an <a href=\"https:\/\/www.nomeatathlete.com\/homemade-energy-bar-recipe\/\">energy bar<\/a> to fill you up.<\/p>\n\n\n\n<p>(Side note: Here&#8217;s an incredible resource our team created for anyone struggling with <a href=\"https:\/\/8020plants.com\/join\/?utm_source=nma&amp;utm_campaign=8020&amp;utm_medium=in_post_text&amp;utm_content=vegetarian-lunches\">how to go plant-based<\/a>.)<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">15 Vegan Lunch Ideas<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">1. Veggie wrap or pita.<\/h3>\n\n\n\n<p>Put <a rel=\"noreferrer noopener\" href=\"https:\/\/www.finecooking.com\/recipes\/hummus.aspx\" target=\"_blank\">hummus<\/a>, cucumbers, greens, <a rel=\"noreferrer noopener\" href=\"https:\/\/www.nomeatathlete.com\/how-to-sprout-beans-seeds\/\" target=\"_blank\">sprouts<\/a>, olives, lemon juice, and salt and pepper in a whole-wheat or sprouted wrap or pita.  <\/p>\n\n\n\n<p>Other go-to options: avocado, shredded carrots, beans, any other vegetable you like.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" width=\"1024\" height=\"682\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2019\/04\/wrap-1024x682.jpg\" alt=\"4 colorful wraps on astone plate with fresh greens and beets.\" class=\"wp-image-36389\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2019\/04\/wrap-1024x682.jpg 1024w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2019\/04\/wrap-300x200.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2019\/04\/wrap-768x512.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2019\/04\/wrap-480x320.jpg 480w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2019\/04\/wrap-600x400.jpg 600w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2019\/04\/wrap.jpg 1400w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">2. Bean burrito.<\/h3>\n\n\n\n<p>Heat black or pinto beans, pile onto a whole-wheat (lard-free) tortilla with salsa, lettuce, cilantro, and hot sauce<\/p>\n\n\n\n<p>Add avocado, tomatoes, and even raw veggies like peppers if you&#8217;d like.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">3. Loaded-up salad.<\/h3>\n\n\n\n<p>Salad doesn&#8217;t have to be just greens, and it certainly doesn&#8217;t have to be boring. Some ideas to boost the calorie-count with protein, complex carbs, and healthy fats include: <\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Walnuts<\/li><li>Sliced almonds<\/li><li>Hemp seeds<\/li><li>Sunflower seeds<\/li><li>Orange slices<\/li><li>Apple slices<\/li><li>Avocado<\/li><li>Fancy nut oils<\/li><li>Lemon juice<\/li><li>Tempeh<\/li><li>Olives<\/li><li>Dulse flakes<\/li><li>Nori<\/li><li>Garbanzo, white, black, or pinto beans<\/li><\/ul>\n\n\n\n<p>And about a million other options. There&#8217;s really no wrong addition to salad. Just ask <a href=\"https:\/\/www.nomeatathlete.com\/fiber-gift-boxes-and-the-four-rules-of-healthy-eating-with-sid-garza-hillman\/\">Sid Garza-Hillman<\/a> and his &#8220;Big Frickin&#8217; Salad.&#8221;<\/p>\n\n\n\n<figure class=\"wp-block-embed-youtube wp-block-embed is-type-video is-provider-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<div class=\"video-container\"><iframe loading=\"lazy\" title=\"THIS is a frickin&#039; salad.\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/YB1h6u9usVc?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/div>\n<\/div><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">4. Peanut\/almond\/sunflower seed butter on a bagel.<\/h3>\n\n\n\n<p>A good, whole-wheat or sprouted bagel has more protein than you might think.  And nut butters generally provide healthy fats along with some more protein.  <\/p>\n\n\n\n<p>Some fun add-ons: sliced banana or jelly.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">5. Apple with nut butter.<\/h3>\n\n\n\n<p>This one&#8217;s a favorite recently in Matt&#8217;s house. His wife and kids have been known to eat apples with nut butter like they&#8217;re going out of style. (As if eating like a second-grader were ever <em>in<\/em> style.)  <\/p>\n\n\n\n<p>I wouldn&#8217;t call this a meal on its own, but add a banana and a few handfuls of raw nuts, and you essentially have the lunch I survived off of during my <a href=\"https:\/\/www.nomeatathlete.com\/book-tour-recap\/\">book tour<\/a>. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">6. Quesadilla.<\/h3>\n\n\n\n<p>You could make a standard Mexican version by melting some vegan cheese or guacamole between two tortillas and tossing in some mushrooms or roasted peppers and topping it with salsa.  <\/p>\n\n\n\n<p>Or you could ditch the Mexican theme entirely and use hummus (<a rel=\"noreferrer noopener\" href=\"https:\/\/allrecipes.com\/Recipe\/Black-Bean-Hummus\/Detail.aspx\" target=\"_blank\">black-bean hummus<\/a> is a nice change) and fresh vegetables. Veggie burger.<\/h3>\n\n\n\n<p>They&#8217;re best when they&#8217;re <a href=\"https:\/\/www.nomeatathlete.com\/veggie-burger-recipe\/\">homemade<\/a>, since you know exactly what you put in them. Just make extra and freeze some for later. <\/p>\n\n\n\n<p>If you&#8217;re gonna get picky and call that &#8220;leftovers,&#8221; then buy some premade ones at the store.  <\/p>\n\n\n\n<p>Hint: Veggie burgers get a lot better when you dress them up with buffalo sauce, mustard, avocado, and whatever other toppings you like.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><a href=\"https:\/\/lovecomplement.com\/products\/complement-plus-smart-vegan-capsules\/?utm_source=nma&amp;utm_campaign=cplus&amp;utm_medium=in_post_graphic&amp;utm_content=vegetarian-lunches\"><img decoding=\"async\" width=\"1024\" height=\"256\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/06\/comp-plus-pbd-athlete-hub-page-inline-ad-v1-1024x256.jpg\" alt=\"\" class=\"wp-image-43830\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/06\/comp-plus-pbd-athlete-hub-page-inline-ad-v1-1024x256.jpg 1024w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/06\/comp-plus-pbd-athlete-hub-page-inline-ad-v1-300x75.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/06\/comp-plus-pbd-athlete-hub-page-inline-ad-v1-768x192.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/06\/comp-plus-pbd-athlete-hub-page-inline-ad-v1.jpg 1200w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">8. A frozen, store-bought meal.<\/h3>\n\n\n\n<p><a rel=\"noreferrer noopener\" href=\"https:\/\/www.michaelpollan.com\/\" target=\"_blank\">Michael Pollan<\/a> has taught us that prepared meals you buy in a store are not real foods. And this is a good rule of thumb. <\/p>\n\n\n\n<p>But while I certainly wouldn&#8217;t eat them every day, there are some decent frozen vegan meals like pasta, pizza, and rice or noodle bowls, popping up in grocery-store freezers. Amy&#8217;s, Kashi, and Sweet Earth are popular brands you can find at most grocery stores, and Trader Joe&#8217;s has several vegan frozen meal options.<\/p>\n\n\n\n<p>And then you can&#8217;t forget one of <a href=\"https:\/\/www.nomeatathlete.com\/radio-214\/\">Robert Cheeke&#8217;s go-to&#8217;s<\/a>, Amy&#8217;s frozen rice, and bean burrito. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">9. Vegetables dipped in hummus with toasted pita chips.<\/h3>\n\n\n\n<p>This one is about as easy as it gets, and to make it even easier, you can just buy the hummus at the store. <\/p>\n\n\n\n<p>But if you&#8217;re like my family, and regularly make your own hummus anyway, here are a few of my favorite recipes:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><a href=\"https:\/\/www.nomeatathlete.com\/black-bean-hummus\/\">Black Bean Hummus<\/a><\/li><li><a href=\"https:\/\/ohsheglows.com\/2013\/10\/04\/no-meat-athlete-buffalo-hummus-recipe\/\">Buffalo Hummus<\/a> (from the <em>No Meat Athlete Cookbook<\/em>)<\/li><li><a href=\"https:\/\/www.thugkitchen.com\/recipes\/black-eyed-pea-hummus\">Black Eyed Pea Hummus<\/a><\/li><li><a href=\"https:\/\/www.thebuddhistchef.com\/recipe\/hummus\/\">The Buddhist Chef&#8217;s Hummus<\/a><\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">10. Flatbread pizza.<\/h3>\n\n\n\n<p>Refer to Christine&#8217;s <a rel=\"noreferrer noopener\" href=\"https:\/\/www.nomeatathlete.com\/vegan-flatbread\/\" target=\"_blank\">vegan flatbread<\/a> recipe if you want to make it yourself. Avocado toast.<\/h3>\n\n\n\n<p><a href=\"https:\/\/money.cnn.com\/2017\/05\/15\/news\/millennials-home-buying-avocado-toast\/index.html\">Millennials love avocado toast<\/a>, right? Well so do we at No Meat Athlete. <\/p>\n\n\n\n<p><a href=\"https:\/\/www.nomeatathlete.com\/podcast\/\">NMA Radio<\/a> co-host Doug&#8217;s favorite version uses a toasted baguette as the bread, then layers on the following: <\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Hint of olive oil<\/li><li>Lightly mashed avocado<\/li><li>Thinly sliced tomatoes<\/li><li>Salt<\/li><li>Pepper<\/li><li>Sriracha<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">12. To-Go vegan sushi.<\/h3>\n\n\n\n<p>Ok, I fully admit that having to go buy something doesn&#8217;t really fit the rules I defined at the top of the post, but team member Esther shared this idea, and I think it&#8217;s a good one. <\/p>\n\n\n\n<p>When in a pinch, hit up a grocery store or other fresh market for some to-go vegan sushi. It&#8217;s simple, fresh, and typically pretty healthy. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">13. Can of soup.<\/h3>\n\n\n\n<p>When Doug worked in a downtown DC office building, he kept a few cans of soup in his desk for when he was in a pinch. <\/p>\n\n\n\n<p>These days you can get a lot of semi-healthy lentils, vegetable, and even no-chicken noodle soups for pretty cheap. Overnight oats. <\/h3>\n\n\n\n<p>I know, this is typically considered a breakfast food, but it certainly doesn&#8217;t have to be. <\/p>\n\n\n\n<p>Use the oats a base, then add in a ton of nuts, seeds, fruit, and even nut butters, and you have a super easy meal ready for lunchtime. It does require a little planning ahead, but ends up being perfect for lunch meetings or super busy days at work. <\/p>\n\n\n\n<p>Here are a few of our team&#8217;s favorite recipes:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><a href=\"https:\/\/ohsheglows.com\/2015\/07\/22\/vegan-overnight-oats\/\">Vegan Overnight Oats<\/a> (This is a great standard recipe)<\/li><li><a href=\"https:\/\/minimalistbaker.com\/peanut-butter-overnight-oats\/\">Peanut Butter Overnight Oats<\/a> <\/li><li><a href=\"https:\/\/ohsheglows.com\/2012\/03\/23\/green-monster-vegan-overnight-oats-getting-back-into-running\/\">Green Monster Overnight Oats<\/a><\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">15. Vegan &#8220;Caprese&#8221; open-faced sandwich. <\/h3>\n\n\n\n<p>This idea actually came from a reader, and I love it. The idea and execution is super simple: <\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Use a toasted sprouted bread as your base layer.<\/li><li>Add a thin slice of firm tofu (it can come straight from the package, no cooking needed) as a replacement for the mozzarella. <\/li><li>Throw on tomatoes and basil. <\/li><li>Drizzle with a bit of balsamic vinegar. <\/li><\/ol>\n\n\n\n<p>I have to admit, when I first went vegetarian I wouldn&#8217;t have been into the idea of tofu straight from the package, but now I don&#8217;t mind it at all. It absorbs whatever flavor you throw on it, and can taste rather refreshing. <\/p>\n\n\n\n<p><strong>There you have it.  Now there are 15 fewer excuses to keep eating meat. <\/strong><\/p>\n\n\n\n<p>But it&#8217;s important to note<strong>:<\/strong> These are supposed to be quick and convenient lunches. Many of them aren&#8217;t exactly nutritional powerhouses.
