I&#8217;ve made four meals from it and all of them have been very good.&nbsp; I already told you about <a href=\"https:\/\/www.nomeatathlete.com\/1000-vegan-recipes\/\" target=\"_blank\" rel=\"noopener noreferrer\">pasta with white bean and garlic sauce<\/a>; it&#8217;s ground walnuts!&nbsp; The sauce in this one was really flavorful &#8212; roasted red peppers, tomato paste, onions, garlic, and some spices, combined in a food processor.&nbsp; Better than any non-vegan ziti I&#8217;ve had.<\/p>\n<p style=\"text-align: left;\">Salad with fennel, macadamia nuts, and dried cranberries:<img decoding=\"async\" class=\"aligncenter wp-image-31231 size-full\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/macadamia-salad-photo.jpg\" alt=\"Close up of Salad with fennel, macadamia nuts, and dried cranberries from 1,000 Vegan Recipes\" width=\"2048\" height=\"1536\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/macadamia-salad-photo.jpg 2048w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/macadamia-salad-photo-300x225.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/macadamia-salad-photo-768x576.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/macadamia-salad-photo-1024x768.jpg 1024w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/macadamia-salad-photo-500x375.jpg 500w\" sizes=\"(max-width: 2048px) 100vw, 2048px\" \/><\/p>\n<p style=\"text-align: center;\">\n<p>Of everything I&#8217;ve made from <a href=\"https:\/\/www.nomeatathlete.com\/books\/\">1,000 Vegan Recipes<\/a>, this salad is the best so far.&nbsp; It has a light, sweet vinaigrette dressing with shallot that goes really nicely with the cranberries and nuts.&nbsp; Here&#8217;s my adapted recipe for that one:<\/p>\n<h3>Vegan Macadamia Cranberry Salad<\/h3>\n<blockquote><p><em>Ingredients for the salad: <\/em><\/p>\n<ul>\n<li>1 head green leaf lettuce, chopped<\/li>\n<li>1 fennel bulb, thinly sliced<\/li>\n<li>1 avocado, diced<\/li>\n<li>1\/2 cup Craisins<\/li>\n<li>1\/4 cup macadamia nuts, chopped<\/li>\n<\/ul>\n<p><em>Ingredients for the dressing:<\/em><\/p>\n<ul>\n<li>half a small shallot, minced<\/li>\n<li>1\/3 cup olive oil<\/li>\n<li>3 Tbsp apple cider vinegar<\/li>\n<li>1\/4 tsp sugar<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p>Combine the salad ingredients in a bowl.&nbsp; Process the dressing ingredients in a blender or food processor.&nbsp; Mix and eat!<\/p><\/blockquote>\n<p>The one problem I&#8217;ve had with the book so far is one that a commenter mentioned &#8212; some of the measurements seem a little off.&nbsp; This isn&#8217;t a huge deal for me, since I usually eyeball ingredient amounts anyway, but it can be a problem.&nbsp; Exhibit A:<img decoding=\"async\" class=\"aligncenter wp-image-31240 size-full\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/scorched-pot-photo.jpg\" alt=\"Scorched Dutch Oven\" width=\"2048\" height=\"1536\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/scorched-pot-photo.jpg 2048w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/scorched-pot-photo-300x225.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/scorched-pot-photo-768x576.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/scorched-pot-photo-1024x768.jpg 1024w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/scorched-pot-photo-500x375.jpg 500w\" sizes=\"(max-width: 2048px) 100vw, 2048px\" \/><\/p>\n<p style=\"text-align: center;\">\n<p style=\"text-align: left;\">My freaking Dutch oven got scorched!&nbsp; And we&#8217;re still trying to get the char off of it.&nbsp; This is what I presume happens when there&#8217;s not enough water in a chili recipe and you let it simmer for 45 minutes.&nbsp; As we were adding the water, I mentioned to Erin that it didn&#8217;t seem like enough.&nbsp;
