{"id":5994,"date":"2009-11-05T17:21:47","date_gmt":"2009-11-05T22:21:47","guid":{"rendered":"https:\/\/www.nomeatathlete.com\/?p=5994"},"modified":"2020-02-26T16:03:34","modified_gmt":"2020-02-26T21:03:34","slug":"butternut-squash-lasagna","status":"publish","type":"post","link":"https:\/\/www.nomeatathlete.com\/butternut-squash-lasagna\/","title":{"rendered":"Questions and Answers"},"content":{"rendered":"<p><strong>You<\/strong>: Hey Matt, how&#8217;s your new plan of running every day to get out of your rut going?<\/p>\n<p><strong>Me<\/strong>:\u00a0 Funny you should ask, I was just going to mention that on my blog today!\u00a0 It&#8217;s going really well.\u00a0 So well that I went to bed at midnight last night and still managed to get up with Erin at 5:30 and not go back to sleep.<\/p>\n<p><strong>You<\/strong>: And what about that cooking rut?\u00a0 I haven&#8217;t seen much good food on your blog recently&#8230;<\/p>\n<p><strong>Me<\/strong>: Again, perfect timing.\u00a0 I decided today that I was going to throw the health food out the window and make something really bad, but really good, to make cooking fun again!<\/p>\n<p><strong>You<\/strong>: Ok, can you just tell me about it in a normal post instead of this weird Q&amp;A format where you make up questions you want to answer?<\/p>\n<p><strong>Me<\/strong>: Sure.<\/p>\n<h2>Butternut Squash Lasagna<\/h2>\n<p>So what is it that I made?\u00a0 (That&#8217;s the last question, I promise.)\u00a0 Butternut squash lasagna!\u00a0 Last week I had an extra butternut squash lying around &#8212; really &#8212; and I came across a Giada de Laurentiis recipe for <a href=\"https:\/\/www.foodnetwork.com\/recipes\/giada-de-laurentiis\/butternut-squash-lasagna-recipe\/index.html\" target=\"_blank\" rel=\"noopener noreferrer\">butternut squash lasagna<\/a>.\u00a0 It looked really good but it was loaded with cheese and whole milk, so I passed.\u00a0 I&#8217;ve actually been tending toward vegan meals recently, noticing that I feel better, especially while running, when I don&#8217;t eat much dairy.<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" class=\"aligncenter wp-image-31206 size-full\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/butternut-squash-lasagna-photo.jpg\" alt=\"Butternut Squash Lasagna inspired by Giada De Laurentiis\" width=\"2048\" height=\"1536\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/butternut-squash-lasagna-photo.jpg 2048w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/butternut-squash-lasagna-photo-300x225.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/butternut-squash-lasagna-photo-768x576.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/butternut-squash-lasagna-photo-1024x768.jpg 1024w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/butternut-squash-lasagna-photo-500x375.jpg 500w\" sizes=\"(max-width: 2048px) 100vw, 2048px\" \/><\/p>\n<p>But desperate times call for desperate measures.\u00a0 As healthy as all the vegan, <a href=\"https:\/\/www.nomeatathlete.com\/eat-like-a-poor-person\/\" target=\"_blank\" rel=\"noopener noreferrer\">poor person food<\/a> I&#8217;ve been eating is, it&#8217;s just not very exciting.\u00a0 And it never seems worthy of being blogged about.\u00a0 So today I decided to make Giada&#8217;s lasagna.<\/p>\n<p>As I do every time I write about Giada, like when I made her delicious <a href=\"https:\/\/www.nomeatathlete.com\/baked-penne-roasted-vegetables\/\" target=\"_blank\" rel=\"noopener noreferrer\">veggie pasta bake<\/a>, I must make the obligatory &#8220;Giada scares me because her head is big and weird-shaped and she says things with funny accents&#8221; comment.\u00a0 So there that is.<\/p>\n<p>Anyway, the lasagna turned out pretty good.\u00a0 When Erin and I were meat-eaters, we used to make this fabulous lasagna entirely from scratch.\u00a0 All-day simmered meat (turkey, eventually), homemade pasta noodles, and a creamy bechamel sauce.<\/p>\n<p>This butternut lasagna is made with a bechamel, but by comparison to the lasagna we used to make, it paled a bit.\u00a0 Some of the bechamel gets blended with basil, which is kind of cool, until it all gets mixed together in a strange green color.<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" class=\"aligncenter wp-image-31205 size-full\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/basil-bechamel-photo.jpg\" alt=\"Bechamel sauce for .Butternut Squash Lasagna\" width=\"2048\" height=\"1536\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/basil-bechamel-photo.jpg 2048w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/basil-bechamel-photo-300x225.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/basil-bechamel-photo-768x576.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/basil-bechamel-photo-1024x768.jpg 1024w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/11\/basil-bechamel-photo-500x375.jpg 500w\" sizes=\"(max-width: 2048px) 100vw, 2048px\" \/><\/p>\n<p>But it was a nice change of pace, at the very least.\u00a0 And it has amaretti cookies in it (though I couldn&#8217;t find them and just used almond cookies)!\u00a0 And hopefully, it&#8217;s a start to getting out of this cooking rut and putting a little more effort into choosing exciting meals.<\/p>\n<p>And now I&#8217;m off to do my weekly Thursday night trail run.\u00a0 In the complete dark, thanks to daylight savings time.\u00a0 And then drinking with a little bit of eating afterward.\u00a0 These people bring beer in their trunks to drink in the parking lot as soon as we&#8217;re done.\u00a0 It&#8217;s awesome!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>You: Hey Matt, how&#8217;s your new plan of running every day to get out of your rut going?
