family, tradition, sweets, and laughter. &nbsp;<\/p>\n\n\n\n<p>So now &#8212; just a few days before Christmas &#8212; it&#8217;s time to start baking. <\/p>\n\n\n\n<p>Below are two cookie recipes perfect for Christmas.&nbsp;<\/p>\n\n\n\n<p>The first is the classic Christmas sugar cookie, just like the ones I&#8217;ve grown up decorating for years. <\/p>\n\n\n\n<p>The second is a twist on Stepfanie Romine&#8217;s famous Calorie Bomb Cookies from the <a href=\"https:\/\/www.nomeatathlete.com\/cookbook-info\/\">No Meat Athlete Cookbook<\/a>, perfectly transformed into a Christmas energy delight.\u00a0<\/p>\n\n\n\n<p>Enjoy!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Vegan Rolled Sugar Cookie Recipe<\/h2>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"873\" height=\"1024\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/12\/izzy-cookies-873x1024.jpg\" alt=\"\" class=\"wp-image-44578\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/12\/izzy-cookies-873x1024.jpg 873w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/12\/izzy-cookies-256x300.jpg 256w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/12\/izzy-cookies-768x901.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/12\/izzy-cookies-1310x1536.jpg 1310w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/12\/izzy-cookies-scaled.jpg 1746w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2020\/12\/izzy-cookies-150x176.jpg 150w\" sizes=\"(max-width: 873px) 100vw, 873px\" \/><\/figure>\n\n\n\n<p>These simple sugar cookies were created by <a href=\"https:\/\/plantbites.com\/?utm_source=nma&amp;utm_campaign=bites&amp;utm_medium=in_post_text&amp;utm_content=plant-bites\">Plant Bites<\/a> founder Izzy Fischer and allow for a few key variations that will give the recipe an extra boost. <\/p>\n\n\n\n<p><strong>Ingredients:&nbsp;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>3\/4 cup vegan butter, room temperature<\/li><li>1\/2 cup sugar\u00a0<\/li><li>1\/3 cup brown sugar<\/li><li>1\/4 cup applesauce, pumpkin, or banana<\/li><li>2 tablespoon coconut milk or dairy-free creamer<\/li><li>1 teaspoon vanilla extract<\/li><li>1 3\/4 cup flour of choice (see Variations below to mix it up!)<\/li><li>1\/2 teaspoon baking powder<\/li><li>1\/4 teaspoon salt<\/li><\/ul>\n\n\n\n<p><strong>Variations:&nbsp;<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Make these cookies gluten-free substituting the flour with a gluten-free flour mix of your choice.&nbsp;<\/li><li>Add a boost of protein substituting the flour with 1\/2 cup <a href=\"https:\/\/lovecomplement.com\/products\/complement-protein\/?utm_source=nma&amp;utm_campaign=cpro&amp;utm_medium=in_post_text&amp;utm_content=christmas-cookies\">Complement Protein<\/a> + 1 1\/4 cup flour of choice.&nbsp;<\/li><\/ol>\n\n\n\n<h3 class=\"wp-block-heading\">Frosting<\/h3>\n\n\n\n<p><strong>Ingredients:&nbsp;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 cups powdered sugar (Note: Store-bought powdered sugar isn&#8217;t vegan, but you can make it yourself by just grinding vegan sugar in a high-speed blender)<\/li><li>3-4 tablespoon almond milk<\/li><\/ul>\n\n\n\n<p><strong>Options for natural coloring:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Beet juice<\/li><li>Berry powders<\/li><li>Matcha<\/li><li>Spirulina<\/li><\/ul>\n\n\n\n<p><strong>Steps:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>In a stand mixer cream together the brown sugar, cane sugar, and vegan butter.<\/li><li>Add the fruit pur\u00e9e (this acts as an egg replacement!).<\/li><li>Add vanilla extract and coconut milk\/creamer and mix all together with a spoon.<\/li><li>In a separate bowl whisk together the flours\/protein powder, baking powder, and sea salt.\u00a0<\/li><li>Add 1\/4 cup at a time the dry ingredients to the wet ingredients and mix until well combined and crumbly but can be pressed together.<\/li><li>Press together into a dough ball and refrigerate for 1-2 hours.<\/li><li>Once chilled, preheat the oven to 350 degrees and line a baking sheet with parchment. Roll out chilled dough until about 1\/4-1\/2 inch thick. Cut with cookie cutters or glass and bake for 10-12 minutes until the edges and bottom are golden brown. Let cool until room temp.<\/li><li>While cooking, make the frosting by whisking together powdered sugar and almond milk &#8211; optional to make it a buttercream by adding 1\/2 cup of vegan butter.
