<em>for <\/em>dinner, no.\u00a0 But I&#8217;ve been trying to get more fresh greens in my diet since realizing last week that I had been feeling a little sluggish as a result of getting lazy in the kitchen.\u00a0 Or more accurately, getting lazy with my shopping.\u00a0 When I shop and cook lazily (or don&#8217;t cook at all), I still eat pretty well.\u00a0 But fresh greens and veggies are usually the first thing to go.\u00a0 That&#8217;s the great thing about having a blog though&#8211; if I start slacking, you&#8217;ll notice!\u00a0 Well, one of the great things.\u00a0 Maybe not as great as free <a href=\"https:\/\/www.nomeatathlete.com\/oikos-organic-greek-yogurt-and-a-new-coffee-challenge\/\" target=\"_self\" rel=\"noopener noreferrer\">yogurt<\/a>.<\/p>\n<p><strong>So I decided to put my machismo aside (as if there were any to begin with) and make a salad for dinner.<\/strong> But there&#8217;s a bonus!\u00a0 Wait for it, wait for it&#8230; couscous and chickpea cakes!\u00a0 Hmm, doesn&#8217;t sound like such an exciting bonus, does it?\u00a0 But I&#8217;m trying to get some extra whole grains this week before <a href=\"https:\/\/www.nomeatathlete.com\/one-week-until-my-half-marathon\/\" target=\"_blank\" rel=\"noopener noreferrer\">my race<\/a> on Sunday, plus chickpeas are an awesome protein source for a vegetarian athlete.\u00a0 And believe it or not, these cakes actually make the meal!\u00a0 Of course, Erin and I helped out a little.<\/p>\n<p><img decoding=\"async\" class=\"alignleft wp-image-30660\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/008.jpg\" alt=\"Couscous on a plate\" width=\"315\" height=\"236\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/008.jpg 2048w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/008-768x576.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/008-500x375.jpg 500w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/008-300x225.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/008-1024x768.jpg 1024w\" sizes=\"(max-width: 315px) 100vw, 315px\" \/>From Fine Cooking.\u00a0 I haven&#8217;t been making their stuff much recently because they keep changing the pages later so that you have to sign up for something to see the recipes.\u00a0 So if you&#8217;re going to make this one, do it soon!<\/p>\n<p>We changed just a few things with this recipe.\u00a0 I couldn&#8217;t find canned artichoke bottoms at the store, so we just used hearts.\u00a0 Funny how they make artichokes sound like people, with bottoms and hearts.\u00a0 I love artichokes recently, ever since I started eating <a href=\"https:\/\/www.nomeatathlete.com\/meatless-muffaletta-sandwiches\/\" target=\"_self\" rel=\"noopener noreferrer\">meatless muffaletta sandwiches<\/a>.\u00a0 Also, I used my Oikos Organic Greek Yogurt instead of sour cream, and instead of using just baby spinach, we added some spring mix from the farmers market.\u00a0 And we used whole wheat couscous and substituted canola oil for the EVOO.\u00a0 Oh and one more substitution, I used the word &#8220;EVOO&#8221; instead of &#8220;extra-virgin olive oil,&#8221; because Rachael Ray has infected my brain!<\/p>\n<p><img decoding=\"async\" class=\"alignright wp-image-30663\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/012.jpg\" alt=\"Plate of couscous cakes on top of baby spinach and tomato salad\" width=\"317\" height=\"238\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/012.jpg 2048w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/012-768x576.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/012-500x375.jpg 500w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/012-300x225.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/05\/012-1024x768.jpg 1024w\" sizes=\"(max-width: 317px) 100vw, 317px\" \/>This meal was surprisingly good.\u00a0 I say &#8220;surprisingly&#8221; because I was expecting it to be a little bland.\u00a0 But it wasn&#8217;t at all!\u00a0 <strong>The couscous cakes were awesome<\/strong>, though ours didn&#8217;t brown up quite as nicely as I had hoped.\u00a0 And I overcrowded the pan, making them in one batch instead of two, resulting in about a 50 percent success rate of cakes making it to the plate intact.\u00a0 But no problem; I made a double recipe (who wants to use <em>half <\/em>a can of chickpeas?), so I just tossed the crumbled ones with some salad today for a really tasty lunch.\u00a0 Two complaints with this meal: the dressing was too lemony-tart, and the meal took much longer than I think a salad should.\u00a0 For the dressing, I&#8217;d use less lemon or add something to balance it.\u00a0 The feta cheese did this to an extent, but not enough.\u00a0 Maybe some honey?<\/p>\n<p><strong>I&#8217;m so glad that some readers are joining me in making a change for 30 days!<\/strong> It&#8217;s not too late to sign up.\u00a0 The signup process is extremely complicated;
