{"id":1100,"date":"2009-04-23T14:01:13","date_gmt":"2009-04-23T18:01:13","guid":{"rendered":"https:\/\/www.nomeatathlete.com\/?p=1100"},"modified":"2020-04-18T12:45:14","modified_gmt":"2020-04-18T16:45:14","slug":"vegetarian-recipe-lentil-burgers","status":"publish","type":"post","link":"https:\/\/www.nomeatathlete.com\/vegetarian-recipe-lentil-burgers\/","title":{"rendered":"Lentil Burgers"},"content":{"rendered":"<p>Time for another Twitter-submitted recipe, this one from <a href=\"https:\/\/www.twitter.com\/reluctantveggie\" target=\"_self\" rel=\"noopener noreferrer\">@reluctantveggie<\/a>.\u00a0 She runs a blog called The Reluctant Vegetarian <em>(this website is no longer available)<\/em>, something that I imagine a lot of you are (or, more likely, whoever you live with is).\u00a0 So check it out for lots of recipes from someone in the same boat!<\/p>\n<p>The recipe is for lentil burgers; you can find it <a href=\"https:\/\/reluctantveggie.com\/?p=107\" target=\"_self\" rel=\"noopener noreferrer\">here<\/a>.\u00a0 I know lentils don&#8217;t sound too terribly exciting, but don&#8217;t let that stop you from trying this recipe.\u00a0 In addition to lentils, there are carrots, onions, oats, and breadcrumbs (or flaxseed, see next paragraph), so they&#8217;re great for you.\u00a0 Lentils, like beans, are loaded with protein and fiber, among tons of other good stuff.\u00a0 And as it turns out, they make a damn good burger.\u00a0 You might remember my first attempt at vegetarian &#8220;burgers,&#8221; <a href=\"https:\/\/www.nomeatathlete.com\/vegetarian-recipe-portobello-bistro-burgers\/\" target=\"_self\" rel=\"noopener noreferrer\">portobello bistro burgers<\/a>, and my second attempt, <a href=\"https:\/\/www.nomeatathlete.com\/vegetarian-recipe-mexican-black-bean-burgers-with-tomatillo-and-avocado-salsa\/\" target=\"_self\" rel=\"noopener noreferrer\">Mexican black bean burgers<\/a>.\u00a0 Portobellos are shaped like burgers and have a nice beefy flavor, but they just don&#8217;t seem like burgers when you&#8217;re eating them.\u00a0 They seem like mushrooms.\u00a0 And the black bean burgers, though tasty, were just too soft.\u00a0 These lentil burgers, on the other hand, eat like real burgers.<\/p>\n<p>The recipe calls for frying or baking the burgers, but I chose to grill them since I was grilling bread to serve them on (I served these bistro-style, like the portobello burgers).\u00a0 It worked out well, since these burgers stayed together nicely and didn&#8217;t fall through the grates or anything.\u00a0 I do think that pan-frying might have been a little better though, since the grill tends to dry food out, and our only complaint with these was that they were a little dry.\u00a0 So go with the original recipe and fry them (which will add a little moisture) rather than grilling.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-30638 size-full\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/04\/meals-014.jpg\" alt=\"Uncooked lentil burgers on grill\" width=\"2048\" height=\"1536\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/04\/meals-014.jpg 2048w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/04\/meals-014-300x225.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/04\/meals-014-768x576.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/04\/meals-014-1024x768.jpg 1024w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2009\/04\/meals-014-500x375.jpg 500w\" sizes=\"(max-width: 2048px) 100vw, 2048px\" \/>A suggestion that @reluctantveggie gave me, which in my excitement I forgot to do, is to substitute ground flaxseed for the breadcrumbs.\u00a0 Definitely a little healthier, and probably tastier too.\u00a0 Ground flaxseed has a nice nutty flavor that somehow gets lost in the pure-evil flavor that pure flaxseed oil conveys.\u00a0 We add it to our smoothies now instead of oil, for that whole-food goodness.\u00a0 I&#8217;ll definitely try it in the burgers next time.<\/p>\n<p>Like I said, these burgers were awesome, even if a little dried out by the grill.\u00a0 It really felt like we were eating real burgers.\u00a0 One caveat: when I say these burgers taste great, don&#8217;t expect a medium-rare piece of beef on your plate.\u00a0 I wish veggie burgers were called &#8220;veggie patties&#8221; or something like that, to avoid the comparison.\u00a0 You aren&#8217;t going get a burger; you get a different food that is really good in its own way.\u00a0 And it&#8217;s a hell of a lot better for you.\u00a0 Erin and I agreed that these veggie patties were worth <em>yet another<\/em> 4 out of 5 cows.\u00a0 I swear the rating system isn&#8217;t biased, I just know how to pick &#8217;em!\u00a0 But the credit really goes to @reluctantveggie, for supplying us with this recipe, so pay her blog a visit and let her know how much you like these burgers.<\/p>\n<h3>Marathon Training Update<\/h3>\n<p>In other news, I&#8217;m finally back to a normal running schedule now that my knee is better.\u00a0 I did a hilly seven-miler over the weekend and have done two hill workouts since.\u00a0 My knee is still giving me a little trouble, so I&#8217;m easing back into it, but it feels great to be back.\u00a0 I&#8217;m totally committed to qualifying for Boston at Wineglass in October, which means knocking 10 minutes off my previous best, and it&#8217;s so exciting to commit to something that seems so hard.\u00a0 If you haven&#8217;t committed to something like that in a while, give it a try and remind yourself how good it feels!<\/p>\n<p>Check back tomorrow for buffalo tempeh wraps!\u00a0 I made them today for lunch, and they were friggin&#8217;
