{"id":10052,"date":"2010-07-02T07:21:38","date_gmt":"2010-07-02T11:21:38","guid":{"rendered":"https:\/\/www.nomeatathlete.com\/?p=10052"},"modified":"2022-05-08T22:54:46","modified_gmt":"2022-05-09T02:54:46","slug":"xagave-breakfast-salad","status":"publish","type":"post","link":"https:\/\/www.nomeatathlete.com\/xagave-breakfast-salad\/","title":{"rendered":"Breakfast Salad with a Side of Controversy"},"content":{"rendered":"<p><em>Post by Christine Frazier.<\/em><\/p>\n<p>I love agave nectar.&nbsp; Its sweetness isn&#8217;t bitter like stevia, overwhelming like honey, or immediately identifiable like maple syrup.&nbsp; Its thin consistency makes it easier to use and measure than my other fav, brown rice syrup.<\/p>\n<p><img decoding=\"async\" class=\"alignright wp-image-31732 size-full\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2010\/06\/xagave-photo.jpg\" alt=\"Bottle of Xagave agave nectar\" width=\"209\" height=\"313\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2010\/06\/xagave-photo.jpg 209w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2010\/06\/xagave-photo-200x300.jpg 200w\" sizes=\"(max-width: 209px) 100vw, 209px\" \/>But mainly, I feel better using just a touch of agave nectar in my baked goods for the <a href=\"https:\/\/www.elitefitness.com\/articledata\/glycemic.html\" target=\"_blank\" rel=\"noopener noreferrer\">low glycemic index<\/a>, instead of loading up with white sugar.<\/p>\n<p>So when <a href=\"https:\/\/www.xagave.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Better Body Foods<\/a>&nbsp;sent us a bottle of their agave nectar to try, I should have been psyched right?&nbsp; Actually, I was pretty nervous that finally researching the subject would burst the &#8220;feel good&#8221; bubble around my sweetener of choice.<\/p>\n<p>The <a href=\"https:\/\/www.westonaprice.org\/modern-foods\/1604-agave-nectar-worse-than-we-thought.html\" target=\"_blank\" rel=\"noopener noreferrer\">controversy around agave<\/a> is no secret; after all, it&#8217;s what <a href=\"https:\/\/www.nomeatathlete.com\/brendan-brazier-interview-2\/\">Brendan Brazier gets questioned<\/a> about most often these days, right after &#8220;Where do you get your protein?&#8221;<\/p>\n<p>The <em>Better Body Foods<\/em>&nbsp;brand breaks the agave mold a little bit because it is a blend of both blue and white agave&#8212;it benefits from the extra inulin in blue and extra calcium in white.<\/p>\n<p><a href=\"https:\/\/www.webmd.com\/vitamins-supplements\/ingredientmono-1048-INULIN.aspx?activeIngredientId=1048&amp;activeIngredientName=INULIN&amp;source=2\">Inulin<\/a> is a dietary fiber that promotes good bacteria in your intestines to improve bowel function, and getting 8 grams a day (the amount in 3 tablespoons of <em>Better Body Foods<\/em>) can increase calcium retention and bone density.&nbsp; Inulin also helps lower triglycerides.<\/p>\n<p>Interestingly enough, one of the <a href=\"https:\/\/www.foodrenegade.com\/agave-nectar-good-or-bad\/\" target=\"_blank\" rel=\"noopener noreferrer\">criticisms of agave syrup<\/a> in general is that it actually creates more triglycerides.&nbsp; That&#8217;s the other side of that attractively low glycemic index; instead of turning into blood sugar, the fructose is processed into the bad kind of fats.<\/p>\n<p>As for calcium, a WebMD.com article called &#8220;<a href=\"https:\/\/www.webmd.com\/diet\/features\/the-truth-about-agave\" target=\"_blank\" rel=\"noopener noreferrer\">The Truth about Agave Nectar<\/a>&#8221; claims that &#8220;Nutritionally and functionally, agave syrup is similar to high-fructose corn syrup and sucrose (Karo) syrup. It does contain small amounts of calcium, potassium, and magnesium, but not enough to matter nutritionally.&#8221;<\/p>\n<p>However, one tablespoon of the Xagave brand has 17% of your daily calcium&#8212;more than half a glass of milk!&nbsp; Good for me to know since the dairy section of my <a href=\"https:\/\/www.nomeatathlete.com\/what-the-new-food-pyramid-means-for-vegetarians\/\">food pyramid<\/a> was lacking.<\/p>\n<h3>Is Agave Nectar Any Better Than High Fructose Corn Syrup?<\/h3>\n<p>Xagave has less fructose and less total sugars than HFCS, not to mention the lowest glycemic index.<\/p>\n<p>But, it&#8217;s still sugar.&nbsp; The bottom line is moderation, which was the only consistent opinion or fact I could find about the darn stuff.&nbsp; I believe it still makes an excellent staple food in the <a href=\"https:\/\/www.nomeatathlete.com\/vegetarian-diet-athletes\/\" target=\"_blank\" rel=\"noopener noreferrer\">vegetarian diet for athletes<\/a> as a workout fuel, but not as an all-purpose sweetener. And I pity the man who tries to stop me from shaking up this <a href=\"https:\/\/www.vitaljuice.com\/entry_detail\/everywhere\/10781\/Pineapple_Vanilla_Mojito.htm\" target=\"_blank\" rel=\"noopener noreferrer\">pineapple mojito<\/a> from Vital Juice, made with agave.<\/p>\n<p>As Brendan Brazier said,&nbsp; &#8220;If you&#8217;re a sedentary person sitting around, I wouldn&#8217;t be using it as a sweetener.&nbsp; I think <a href=\"..\/stevia\/\" target=\"_blank\" rel=\"noopener noreferrer\">stevia<\/a> is a great sweetener for tea and things like that, but as a <a href=\"https:\/\/www.nomeatathlete.com\/post-workout-recovery\/\" target=\"_blank\" rel=\"noopener noreferrer\">fuel<\/a>, I think agave is excellent.&#8221;<\/p>\n<p>So, while agave nectar will stay in my &#8220;treat&#8221; diet by means of the occasional dessert, I think it&#8217;s time to remove it from my daily smoothie.&nbsp; Agave&#8217;s real home is in the <a href=\"https:\/\/www.nomeatathlete.com\/pre-workout-drinks\/\">pre-workout meals<\/a> where its sustained-release (but not starchy!) carbs contribute the most.<\/p>\n<h2>Salad&#8230;for Breakfast?<\/h2>\n<p>I&#8217;ve been dying to try a salad for breakfast after reading about the one recommended by <a href=\"https:\/\/www.ruthheidrich.com\/\">Dr. Ruth Heindrich<\/a> in <em><a href=\"https:\/\/www.nomeatathlete.com\/tarahumara-pinole-chia-recipes\/\" target=\"_blank\" rel=\"noopener noreferrer\">Born to Run<\/a>.<\/em> She&#8217;s one hot 75-year-old-cancer-surviving-Ironman-running-vegan-raw-eating mama, so anything she eats for breakfast is fine with me.&nbsp; And why not start the day with leafy greens?<\/p>\n<p>Better Body Foods&nbsp;was nice enough to include a cookbook full of agave recipes in the package they sent us, so I decided to use their Strawberry Vinaigrette recipe in my very own breakfast salad to eat before workouts.&nbsp; Like other agave nectars, Better Body Foods&nbsp;has a light and versatile flavor that works across the board.<\/p>\n<p style=\"text-align: left;\">My salad still has its foot in the breakfast world with cantaloupe and blueberries, but the chickpeas, celery, and spinach are all business.<img decoding=\"async\" class=\"aligncenter wp-image-31681 size-full\" src=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2010\/06\/breakfast-salad-photo.jpg\" alt=\"Fresh vegan breakfast salad\" width=\"2048\" height=\"1536\" srcset=\"https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2010\/06\/breakfast-salad-photo.jpg 2048w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2010\/06\/breakfast-salad-photo-300x225.jpg 300w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2010\/06\/breakfast-salad-photo-768x576.jpg 768w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2010\/06\/breakfast-salad-photo-1024x768.jpg 1024w, https:\/\/www.nomeatathlete.com\/wp-content\/uploads\/2010\/06\/breakfast-salad-photo-500x375.jpg 500w\" sizes=\"(max-width: 2048px) 100vw, 2048px\" \/><\/p>\n<h3>Xagave Strawberry Vinaigrette<\/h3>\n<blockquote><p><em>Reproduced with permission.<\/em><\/p>\n<p><em><br \/>\n<\/em><em>Ingredients:<\/em><\/p>\n<ul>\n<li>1\/3 cup&nbsp;<a href=\"https:\/\/www.xagave.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Better Body Foods<\/a><\/li>\n<li>1\/3 cup white rice vinegar (unsweetened)<\/li>\n<li>6-10 medium strawberries<\/li>\n<\/ul>\n<p>Blend dressing ingredients in a blender until smooth.&nbsp; Pour dressing over salad and toss.<\/p><\/blockquote>\n<h3>NMA Pre-Workout Breakfast Salad<\/h3>\n<blockquote><p><em>Ingredients:<\/em><\/p>\n<ul>\n<li>2 cups (1 can) cooked chickpeas<\/li>\n<li>2 cups cantaloupe, cubed<\/li>\n<li>1 cup fresh blueberries<\/li>\n<li>1 cup (about 4 stalks) celery, diced<\/li>\n<li>1 cup Beter Body Foods<em>&nbsp;Strawberry Vinaigrette<\/em><\/li>\n<li>4 cups fresh baby spinach<\/li>\n<li>1\/2 cup slivered almonds, toasted<\/li>\n<li>salt and pepper to taste<\/li>\n<li>extra strawberries for garnish<\/li>\n<\/ul>\n<p>Combine the chickpeas, cantaloupe, blueberries, and celery in a large bowl.&nbsp; Gently toss with Strawberry dressing.&nbsp; Place one cup of spinach on each of four plates, then divide salad mixture onto each bed of spinach.&nbsp; Sprinkle with almonds, salt, and pepper.&nbsp; Garnish with sliced strawberries.&nbsp; Serves 4.<\/p><\/blockquote>\n<p>This salad is a remarkably refreshing and clean way to start your morning workout.&nbsp; It&#8217;s so delicious, why not sneak it into your barbeques this summer instead of that same ol&#8217; 7 layer taco dip?<\/p>\n<p><strong>I&#8217;d love to hear your opinion on the conflicting information out there about agave nectar.&nbsp; Has clever marketing duped the natural foods community?&nbsp; What&#8217;s your all-purpose sweetener of choice?<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Post by Christine Frazier.
