I followed some advice in the comments and baked the wheatballs (350° for 8 minutes, turn over and 8 minutes again) after I cooked them in the skillet , which helped firm them up. They seemed to have the right consistency after that. I just finished making a second batch to go in the freezer for next time. Thanks for sharing this recipe!
