I didn’t end up needing the last cup of broth before he rice was cooked and the biggest problem I had was that the squash never broke down into a creamy base like shown in the pictures. I had to go back through and mash them with a whisk which of course messes with the texture of the rice. Technically, this did not work out, but the flavor is okay. I probably won’t make it again :/

I have begun trying out your recipes in order to fully transition to a healthier lifestyle that will improve my running. The recipes are easy to follow and really good too. I just made the Butternut Squash risotto and it’s great(!) I also made the Chia Strawberry energy bars and plan try one of them out tomorrow too. Thanks very much!
