Tip: you can skip the aluminum foil if you just leave the garlic unpeeled when roasting it. Leaving the skins on the garlic while it’s in the oven helps lock in moisture, so the result is garlic that is almost melt-in-your-mouth soft. You can slip the skins off easily after the garlic is done roasting.
